Sandwiches Reigned Supreme This Past Week

So... apparently taking pictures of food is a thing of my distant past. Only when I'm on my last bite do I remember that I meant to take a photo. In an effort to stay accountable about cooking at home, here's what I made:

Wed, 5/27 —
Mini cheesesteaks with melted provolone, roasted bell peppers and onions on a toasted Portuguese bun served with an arugula salad topped with crunchy roasted smashed potatoes, red onions, and a dijon mustard vinaigrette

Thurs, 5/28 —
Oatmeal with evaporated milk, maple syrup, pumpkin seeds, almonds, flaxseed meal, strawberries, blueberries, and bananas

Fri, 5/29 —
Steak, cheddar, and egg sandwiches with black truffle oil on french baguettes with a big ass salad of romaine, bell peppers, red onions, black olives, and cucumbers dressed with extra virgin olive oil, black pepper, and red wine vinegar

Sat, 5/30 —
Chicken salad made with leftover Costco rotisserie chicken, celery, red onions, carrots, pumpkin seeds, poppy seeds, goji berries, dried cranberries, mayo + plain greek yogurt with lots of spices (black pepper, sage, thyme, dried chives, dill, oregano) on toasted mini kaiser buns with a simple salad of romaine lettuce dressed in lemon juice
