Sandwiches Are The Ultimate Food

You can make a sandwich out of almost anything. Slap some stuff between two slices of something else. A handheld delight.

Today we had croissants. I gave them a light toast with a sprinkling of some Swiss cheese to melt. I added in sun-dried tomatoes and fresh spinach. The bacon came in as an afterthought, as did a little bit of fig jam.

Served with an arugula salad, tossed with some red onions, Herbes de Provence, black pepper, a drizzle of extra virgin olive oil and a side of beets. Then topped off with some balsamic glaze.
