Rolling Rice Paper Is A Skill To Learn

I've always had trouble with rolling lumpias and making dumplings. Same goes for making spring rolls — I believe it's a skill you must keep practicing at.

Shrimp spring rolls —

Served with peanut sauce: peanut butter, warm water, rice wine vinegar, tamari, red chili flakes, sesame oil, garlic powder, fried garlic, and sweet chili sauce.

I repurposed the leftovers from last night's dinner into today's late lunch by adding Chinese sausages, cutting down the leftover ingredients (noodles included) and adding romaine lettuce. Fresh herbs really hit the spot for me.

Served with nam yum: fish sauce, lime juice, coconut sugar, some water, minced garlic, and hatch chili flakes.
